The Inspiration

Italian food culture, especially from the south, is one of the most important aspects of what Zooma embraces. I grew up in a small town named Sant Ambrogio sul Garigliano, located between Rome and Naples near the west coast of Italy. My beautiful town is located on small hill with a river named Garigliano that peacefully makes it way along our southern border. The view is breathtaking and has the soul of a place that was reborn in the spirit of the people who lost their lives when the town was destroyed in World War II during the Allied taking of the Gustav Line, the last major German line to be broken before liberating Rome.

The Simple Life

My town, like many in the south, is very much focused on food culture and if one thing comes to mind it is how food has remained a connection between local taste and simple way of life. Families raise their own pigs and chickens and make their own wine and tomato sauce – what Rhode Islanders call the famous “Italian gravy.”

One of my favorite Taste of Italy offerings is called “The Simple Life,” where every dish comes with memories of my family and neighbours coming together making wine, cooking food and learning the history of a town that is more than 800 years old.

I will bring to your table fresh ingredients and favorite local dishes, including fresh mozzarella, tomatoes, Gnocchi Nonna, Swordfish with beans, all paired with Aglianco wines Montepulciano and Trebbiano.

A presto,

Dino
