Trattoria Appia is delighted to welcome back Chef Jeffery Burgess. Jeff first joined our kitchen in 2007, bringing with him the depth and character shaped by more than 30 years of culinary experience. He began cooking as a child and honed his craft at Babbo in New York City, where he worked under Mario Batali for four years, before continuing his journey in Italy until 2005.
 
When Jeff joined us in 2007, many of you came to know his creativity firsthand. He introduced in-house pasta almost immediately—a tradition that proudly continues today—and infused our traditional Southern Italian cuisine with a thoughtful, modern sensibility. Chef Burgess returns to Trattoria Appia to create locally sourced, seasonal menus and inspired daily specials.
